Mark Sanchez - Chef and Consultant

Chef Mark or "mouquee", born in Cebu City, Philippines, studied Baking and Design at the Cebu Culinary Center, graduated with an Associate Degree in Hotel & Restaurant Management at the University of San Carlos and became one of the pioneer pastry staff of Marco Polo Plaza Hotel Cebu - Cebu City's only 5-star hotel. He also served as a consultant and culinary trainer for newly-opened restaurants, bakeries and small hotels.

While exploring his interest in culinary, he had owned and operated a café while providing public internet service to clients, popularly called an internet café. He had also taught himself the art of meat processing such as Filipino chorizo, skinless chorizo, smoked longganiza and tocino which had turned into a successful business.

​After migrating to the USA, Chef Mark did not stop learning and relearning the art of culinary, both cooking and baking, by consistently cooking and baking for family and friends, experimenting on new recipes, techniques and attending seminars. As the saying goes, "You don't use it, you lose it!"

His home-cooked lechon belly roll, a culinary evolution from the Philippines' famous Lechon, which, by the way, was hailed by the late Chef Anthony Bourdain as "the best pig ever" and a trademark specialty of his hometown Cebu, was featured in The Filipino Channel's TV show, Adobo Nation, on Dec. 20, 2015, after a staff of the international cable network found his posts on facebook,  Instagram and Twitter. Since The Filipino Channel is a global subscription television channel, the show was seen by Filipino subscribers, expatriates and their families, all over the world!

He specializes in Filipino and international
cuisine and desserts which allow him to create a fusion cuisine for every discerning palate.

​Chef Mark plans to open a restaurant and/or bakery which would feature a gastronomic fusion to suit every discerning palate!

​His mission: To reintroduce Filipino food to the discriminating food connoisseurs and enthusiasts!
After all, the Philippines was
​voted #2 in the
​2015 Top 10 Culinary Hotspots of the World by CNN.
